Study of biochemical modulations in brinjal varieties at diverse storage conditions

Abstract

The three brinjal varieties were selected. They were wrapped in polythene bags and stored at room temperature, 4oC, 10oC, and at -20oC for zero, five and ten days. The biochemical parameters (Total carbohydrates, proteins, antioxidants, polyphenols, ß-carotene, moisture content, polyphenol oxidase) were analyzed by adopting various analytical methods for three varieties at different temperature conditions. The ß- carotene content was determined by spectrophotometer and the values obtained were used to estimate retinol equivalent (vitamin A content).
